Hitchhikers Guide to the Galaxy Cupcakes with Butter Cream Frosting

Ingredients
  

  • 2 cups Sugar
  • 1 3/4 cups All-Purpose Flour
  • 1/2 cup Hershey's or Trader Joe's Cocoa Unsweetened cocoa
  • 1/4 cup Dark Chocolate Hershey's Cocoa (Or just add another 1/4 cup of the unsweetened)
  • 1 1/2 tsp Baking Powder
  • 1 1/2 tsp Baking Soda
  • 1 tsp Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Vegetable Oil
  • 2 tsp Pure Vanilla Extract
  • 1 cup Hot Coffee (allow to cool just a bit)
  • 1 cup Butter (FOR THE BUTTERCREAM FROSTING)
  • 4-5 cups Powdered Sugar (FOR THE BUTTERCREAM FROSTING)
  • 1 Tbsp Milk (FOR THE BUTTERCREAM FROSTING)
  • 1 tsp Vanilla (FOR THE BUTTERCREAM FROSTING)
  • Coloring Dye (FOR THE BUTTERCREAM FROSTING)

Method
 

  1. Preheat oven to 350 degrees F. Line two cupcake pans with cupcakes liners and spray with non-stick spray.
  2. Combine dry ingredients in a bowl. Stir slowly to combine dry ingredients.
  3. Add 2 eggs, 1 cup milk, 1/2 cup vegetable oil and 2 tsp of vanilla and mix well, scraping the sides of the bowl down as needed.
  4. Turn mixer to lowest speed and slowly add the 1 cup of coffee (be careful not to splash). Once combined, use just under 1/4 cup measuring cup and add batter into each cupcake liner (fill 3/4 full, not to the top!)
  5. Bake at 350 degrees for 15-20 minutes, checking with a toothpick or sharp knife (if it comes out clean, then the cupcakes are done). Remove from oven and let cool before frosting.
  6. To make the buttercream, beat the cup of butter for 2 minutes until softened and lighter. Slowly add the 4 cups powdered sugar, 1 tsp vanilla and tablespoon of milk. Add more powdered sugar to reach desired consistency. Color the icing as needed. Load piping bags with frosting and pipe onto the cupcakes!
