Best Homemade Potsticker Soup

This potsticker soup is easy to make and packed full of nutrition. Ingredients
  

  • 2 Tbsp olive oil
  • 1 small White onion chopped
  • 2 large Carrots chopped
  • 2 ribs Celery chopped
  • 1 package Potstickers We mix the Trader Joe's vegetable and pork potstickers. Feel free to use any variety you like!
  • 2 box containers Low Sodium Chicken Broth
  • 1 pre-washed bag Baby Spinach
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 1/2 Lemon or lime juiced
  • 1/2 cup Chopped Cilantro for garnish

Method
 

  1. Chop the onion, carrots and celery. Add 2 tbsp of olive oil to bottom of large stock pot. Grill the veggies in the pot until the onion caramelizes.

  2. Grill the potstickers in a pan with a little olive oil until they are browned on each side, about 5-10 minutes.
  3. Add chicken broth to the large pot and bring to a boil. You can also use vegetable broth if you want to make this soup vegetarian. Add broccoli or leaks at this time if desired. Allow to boil on low and simmer for about 5 minutes.

  4. Add the soy sauce and sesame oil to the pot. Add the grilled potstickers. Just before turning off the heat for the soup, add the spinach and allow it to soften for a minute or two. (You can also wait to add the spinach to the bowls later if some people do not want spinach). Chop and add cilantro as a garnish and serve with lemons or limes to squeeze in for added flavor. Enjoy!
