Orange Chicken and Veggies Recipe

Because I like things sweet and because we have bell peppers coming out the waazoo now, here’s a tender, juicy orange, honey flavored chicken that is sure to delight your taste buds! This super simple recipe calls for chicken thighs atop your favorite chopped veggies. Pour on the sweet orange honey glaze and bake! Dinner was never done easier!

Honey Chicken with Vegetables

You will be delighted by how yummy and healthy this recipe is. It’s an all in one dish which makes for easy clean-up as well. Simply chop your favorite organic vegetables like onions, bell pepper, zucchini, sweet potatoes, mushrooms and add organic chicken thighs, garlic, salt, pepper and the orange honey glaze with thyme, and in no time, your house will smell amazing. Spoon the juices over the chicken and stir the vegetables a few times throughout cooking, and you’ll end up with juicy, tender chicken thighs that make you want to go back for seconds!

Preparing Orange Chicken for roasting

We are really enjoying our Fall garden and loving being able to just run out to the backyard and grab vegetables when we need them! We have planted about 30 bell pepper bushes in our yard and they are all producing! So I’m slowly working through all the bell peppers in our meals. I’m even cleaning and chopping bell peppers and freezing them so we have them ready for quick meals like omelettes and stir-fry.

Green Bell Peppers in the Garden

Here are a five fun facts about bell peppers:

  1. Bell Peppers are in the pepper (Capsicum genus family) along with other hot peppers, but they are lacking the Capsaicin gene which makes most peppers produce the burning sensation when eaten (hot or spicy). This is why they are called sweet peppers.
  2. Bell Peppers are actually fruits! It is a flowering plant which contains seeds inside. So yes, they are a fruit!
  3. Nutritionally, bell peppers are a great source of antioxidants and vitamins.
  4. Red bell peppers have more vitamins and nutrients than green ones. And they contain Lycopene. They have twice the vitamin C content than green peppers.
  5. The pulpy white inside part of the bell pepper is a rich source of Flavenoids and can be eaten. It’s usually discarded!

 

Sweet Orange Chicken and Vegetables Recipe

This is a great meal to make in large quantity because you can easily freeze the chicken thighs with veggies together in portions. Then when you need an even quicker meal, simply pull out a portion and heat in a pan. Add a little bit of water to the bottom of the pan and cover for a few minutes to allow the portion to thaw. Then uncover and grill in the pan until completely heated. Voila! Healthy dinner is served over and over again!

This Sweet Orange Chicken with Roasted Veggies Recipe is super simple and healthy! Organic chicken thighs are roasted above your favorite vegetables, including onions, bell peppers, zucchini, sweet potatoes and mushrooms and then a sweet orange honey glazed is poured over the top. The result is a delightfully sweet orange chicken dinner that even your kids will love!

Ingredients Method Notes

Ingredients
  

  • 6 Organic Chicken Thighs Boneless
  • 1 cup Sweet Potatoes Chopped into squares
  • 1 small Red Bell Peppers Sliced
  • 1 small Yellow or Orange Bell Pepper Sliced
  • 1 small Green Bell Pepper Sliced
  • 1 medium Onion Chopped
  • 1 cup Mushrooms (We use Crimini)
  • 1 Zucchini (Sliced, remove inside with seeds)
  • 2-3 cloves garlic Minced
  • 2 Tbsp Honey
  • 1 Tbsp Thyme (Dried or fresh small bunch of Thyme)
  • 1 Tbsp Dijon Mustard
  • 1 Orange Juiced
  • 2 Tbsp Extra Virgin Olive Oil (We use Trader Joe's California Olive Oil)
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Method
 

  1. Preheat oven to 400 degrees F.
  2. Mix the thyme, honey, mustard and orange juice in a bowl and allow to combine while preparing veggies and chicken.
  3. Chop all vegetables and place in the bottom of a baking pan or large Pyrex dish.
  4. Place chicken thighs on top of vegetables. Drizzle with olive oil. Then pour the orange juice mix over the top and mix around. Shake salt and pepper over the top.
  5. Cook in the oven for 30-40 minutes, turning everything a few times and spooning the juices oven the chicken to keep it moist.
  6. Serve hot and enjoy!
