Easy Oatmeal Cookies

I was introduced to this easy oatmeal cookie recipe by my husband’s mom during the holidays. It was fun to make different varieties with nuts, raisins and chocolate chips. There’s something about a soft, warm oatmeal cookie out of the oven that just makes me so happy!

Oatmeal Cookie Experiments

The easy oatmeal cookie recipe is pretty straightforward. The result is a chewy, yummy oatmeal cookie! I’m not normally a fan of shortening… I only use it in frosting for cupcakes and cakes when I know it needs to withstand heat, but I’ve found that shortening can make a cookie really chewy and delightful. You could substitute for butter, but I think you would get a more flattened cookie.

I experimented with chocolate chip cookies awhile back and found that the shortening made the cookies more chewy. The all butter cookies came out great, but the dough needed more flour to fluff up the cookie and that made them more on the cakey side.

So it really just depends on your preference. I’d say try this easy oatmeal cookie recipe with the shortening first and see just how amazing they are, and then adjust from there. I’ve just been getting into using coconut oil as well, and I’m betting that would work as a more healthy substitute. Stay tuned!

Raisin Oatmeal Cookies

What I love most about these oatmeal cookies is really the most important ingredient, the old fashioned oats. For some reason, adding the oats makes me think this cookie is actually good for me 🙂 (let me dream a little). And I think it’s safe to say that a little healthy indulgence is what makes life meaningful!

Here are some tips when making the easy oatmeal cookies:

  1. Blend the shortening and sugars together first to a creamy consistency. Then add the egg, water and vanilla.
  2. Sift the dry ingredients together into another bowl and then add them to the creamy mixture. Use a wooden spoon or a spatula to add in the oats.
  3. Get creative with fun ingredients to add variety. Why not try coconut flakes or dried cranberries?
  4. AND USE HIGH QUALITY INGREDIENTS. I can’t stress this enough in all my recipe posts. If you want to know a secret to amazing food… use top quality ingredients. Go for the special bag of chocolate chips! I’m telling you, it matters! I love Guittard Chocolate chips for my cookies and other baked items. Also, fresh plump raisins, or organic nuts of your choice. The more fresh, the better!
  5. Bake the cookies until they are just starting to turn a light golden brown. Cool them on a cooling wire rack. Store them in an airtight container for up to a week.

Ingredients Method Notes

Ingredients
  

  • 3/4 cup Shortening
  • 1 cup Brown Sugar Packed
  • 1/2 cup Sugar
  • 1 Egg
  • 1/4 cup Water
  • 2 tsp Vanilla
  • 1 cup All-Purpose Flour Sifted
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 3 cups Old Fashioned Oats

Method
 

  1. Heat oven to 350 degrees F. Beat sugars and shortening together until combined. Add egg, water and vanilla and beat until creamy.
  2. In another bowl, sift together flour, salt and baking soda. Add to the wet ingredients and blend well. Stir in the oats. Also add any other favorite ingredients for variety such as chopped nuts, raisins, chocolate chips or coconut.
  3. Grease a cookie sheet or line with parchment paper. Drop the oatmeal dough by one inch balls onto cookie sheet. Bake at 350 degrees for 12 to 15 minutes. Cookies will turn a light golden brown and firm up as they cool. Enjoy!
