Ingredients
  

Easy Skillet Roasted Chicken
  • 1 4-5 lb. Whole Organic Uncooked Chicken
  • 1-2 Tbsp Salt
  • 1 tsp Pepper
  • 2-4 Tbsp Butter
Gravy
  • 2 Tbsp Butter
  • 2 Tbsp Flour
  • 1/2 cup Dry White Wine
  • 2 cups Chicken Stock or Bone Broth
  • 1/4 tsp Pepper Add more to taste

Method
 

Easy Skillet Roasted Chicken
  1. Pre-heat oven to 450 degrees. Clean and truss the chicken. Place in a skillet breast-side up. Sprinkle 1 tablespoon of salt all over the chicken.

  2. Rub the chicken with 2-4 tablespoons of butter. Sprinkle additional salt and pepper.
  3. Roast the chicken for 20 minutes at 450 degrees. Scoop the butter and drizzle over the chicken. Reduce the temperature to 325 degrees and roast 60-90 minutes, until an instant read thermometer reads 160 degrees when inserted into a thigh.

  4. Place the cooked chicken on a cutting board and tent with foil. Allow to rest for 20-30 minutes. Save the pan drippings for gravy.
Gravy
  1. Save 2 tablespoons of the pan juices and heat over medium heat in the cast iron skillet. Add 2 tablespoons of butter and allow to melt. Add the 2 tablespoons of flour and whisk until smooth. Allow this sauce to thicken and brown.
  2. Add the 1/2 cup of white wine and scrape the pan. Add the 2 cups of broth and simmer for about 5 minutes until the sauce thickens. Add pepper to taste. Enjoy over the chicken and sides.
