Ohhh yummm! This spaghetti squash pasta with tomato sauce and turkey meatballs has been one of our favorite Fall dinner meals. It is so easy to make! Just cut the spaghetti squash in half, roast in the oven, and then scoop out the insides! This spaghetti squash gets it’s name from the long strands that are produced once it’s been cooked! Have you ever heard of a vegetable making spaghetti for you? Ha ha, well, this one does! And its tastes yummy too! This squash has a sweet taste to it, and with pasta sauce and grilled bell peppers you and your family will be going back for seconds!

Spaghetti squash pasta is rich in nutrients and very low in calories! I serve the spaghetti squash with either my homemade tomato sauce or my favorite organic marinara sauce. I also LOVE to go out to the garden and pick fresh bell peppers, chop them up and grill them in a pan with some olive oil and then add them to the sauce! And if you really want to spice things up, add some spicy meatballs to the mix. I’m a fan of the turkey meatballs from Trader Joe’s. They are easy to heat up and simmer in the tomato sauce while the spaghetti squash is cooking in the oven.

Many people are discovering how easy it is to replace carb loaded pastas with fruits and vegetables. I keep saying bell peppers and squash are vegetables, but many will argue that they are actually a fruit because they flower and have seeds on the inside… but no fighting here. Fruit or vegetable, no mind! They are tasty and delicious and deserve to be added in to our comfort foods just like breads and pasta. In fact, usually after eating a meal like the spaghetti squash with tomatoes, bell peppers and turkey meatballs, I will feel more energetic and not so bloated! A win win for me!

This spaghetti squash pasta recipe is easy to make. The spaghetti squash has to bake awhile, but once you cut it and set it in the oven to bake, just set the timer and go get things done around the house! If you have not tried spaghetti squash, definitely add it to your list. This squash should be very easy to find during the autumn months. It makes a yummy Fall dinner and your kids will even enjoy it! The best part about this dish is you can save it over night and have it for leftovers the next day… if you have any left!

Spaghetti Squash Pasta

This Spaghetti Squash Pasta with tomato sauce and turkey meatballs is the perfect pasta replacement Fall dinner. Spaghetti squash cooks up easily and then the flesh scoops out as noodles! Add fresh roasted bell peppers to your tomato sauce to thicken it up and you've created a healthy organic dinner for the family. Easy to make and healthy for you!

Ingredients Method Notes

Ingredients
  

  • 1 large Spaghetti Squash
  • 1 Jar Tomato Sauce or Marinara Sauce Or search for our Famous Homemade Tomato Sauce to make ahead
  • 3 medium Bell Peppers in various colors
  • 1 package Turkey Meatballs We use the Trader Joe's Turkey Meatballs
  • 2 cloves garlic Minced
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Pepper
  • 2-4 Tbsp olive oil

Method
 

  1. Preheat oven to 375 degrees F. Cut the Spaghetti Squash in half lengthwise and scoop out the seeds and strings.
  2. Bake the spaghetti squash in the oven for about 1 hour. While the squash is baking, prepare a sauce pan and simmer tomato sauce on low. Add the frozen turkey meatballs to the sauce pan and cover, allowing to simmer. Add a half a cup of water as the sauce thickens.
  3. Cut bell peppers into large chunks and grill them in a frying pan with a few tablespoons of olive oil. Sprinkle with garlic powder and pepper. Turn the bell peppers a few times and once they are more tender, add them to the pasta sauce.
  4. When the spaghetti squash is cooked, use a fork to scrape the flesh and it should come off in strings. Scrape until all the strings are removed.

  5. Heat up 2 tablespoons of olive oil in a large pan and saute the minced garlic for just a minute. Add in the spaghetti squash and blend well. Once the squash strands turn translucent (only about 3-4 minutes), then they are ready to serve. Plate the squash strands first and then add the tomato sauce with bell peppers and turkey meatballs on top. Serve warm and ENJOY!!!
