Chocolate Covered Strawberry Carrots for Easter
As Easter approaches, I start to think about tasty desserts and party treats and these chocolate covered strawberry carrots popped into mind. They can be placed on top of crushed Oreo’s, made to look like dirt, or simply laid out on a pretty Easter dish to ring in the holiday. However you decide to present them, know that they will be the hit of the party.
Tips for Making Chocolate Covered Strawberry Carrots
- The easy way of making these chocolate covered strawberry carrots is by simply melting orange candy melts with a bit of shortening in a glass bowl. Then dip the strawberries and lay them on a wax paper lined baking sheet.
- You can also melt white chocolate chips and use food coloring to make the orange color to produce a carrot look. Use a high quality white chocolate chip such as Guittard Choc Au Lait White Chips. I’m a huge Guittard fan and use it for both regular and dark chocolate as well as white.
- Melt the chips in a Pyrex dish sitting above a pot of slow boiling water (called double boiling), making sure the water does not touch the bottom of the bowl. Melt the chips and stir the chocolate until smooth. Then add the food coloring and stir. I use the Wilton Icing Coloring Kit (red and yellow). If using orange candy melts instead, simply melt them in a microwave safe glass bowl.
- Pull the greens on top of the strawberry up and use them to dip. Rotate the strawberry around in the chocolate and shake off excess or use a spoon to help coat the strawberry.
- Work quickly as the chocolate will start to harden in the bowl.
- Place the strawberries on a wax paper lined baking sheet. Store the chocolate covered strawberry carrots in a refrigerator until the time of your party. Enjoy!
If you are looking for a yummy Easter dessert to paid with the chocolate covered strawberry carrots, try this Easy French Silk Pie or this Chocolate Cream Pie with Oreo Crust. - Line a baking sheet with wax paper. Rinse the strawberries and pat with paper towels to dry. Place orange candy melts in a microwave safe glass bowl. Microwave for a minute, then 30 second intervals at a time until candy melts are smooth. Stir in between. You can add a tablespoon of shortening or a few drops of vegetable oil to thin the candy melts as well. This is highly recommended.
- Pull the greens of the strawberries up and use them to dip the strawberry into the chocolate. Dip and use a spoon to help coat the strawberry completely. Shake off excess and then place on wax paper lined baking sheet. Refrigerate until ready to use
- Note: You can also melt a high quality white chocolate chip such as Guittard Choc Au Lait White Chips. Melt these chips in a Pyrex dish sitting on top of a pot of very slow boiling water. I use a wooden spoon stuck inbetween to allow steam to escape. Hold the Pyrex dish with a baker's mitt and stir with a wooden spoon. Then add a food dye and stir. Dip the strawberries and coat completely. Line them on a wax paper lined baking sheet and refrigerate.
