Cheesy Chicken Enchilada Dip
I made this cheesy chicken enchilada dip for the football playoffs weekend and to Celebrate National Cheese Day January 20th. The great thing about this cheese dip is you can prep it ahead of time and then just warm it up in the oven and within minutes you have a yummy gooey cheese dip. We even saved half of it for the weekend and reheated it, and it came out just as amazing if not better (because all the ingredients had time to combine).
What’s in the Cheesy Chicken Enchilada Dip
Let’s talk about the ingredients for this very simple appetizer or game day recipe. You are going to be jumping for joy at how easy this dip is to put together. Basically you shred a cooked chicken breast. Then you pour in black beans. Add in a can of red enchilada sauce. Shred your favorite cheddar cheese and then garnish with cilantro if desired. Heat it in the oven (I even used our counter toaster oven that’s large enough to cooks pies) and stir the cheese into the sauce. Of course I won’t stop you if you want to add in your favorite ingredients like onions, corn or sprinkle some taco seasoning. But truth be told, I made this the quick and simple way and it came out A-MAZING!
If you are a cheese fan, then this melted cheese dip will completely satisfy your cheesy delights. All you need is a big bag of tortilla chips and your party food is done! We love curling up on the couch with a warmed up dish of this cheesy chicken enchilada dip on a cold day watching our favorite teams play on tv. Sports fans will dig this party food big time, so you may want to make two dishes and keep one ready in the fridge to heat up. My husband and I have eaten this cheese dip with tortilla chips for dinner. And while he is not a huge cheese fan, he gobbles this down no problemo…

- 1 can Red Enchilada Sauce
- 1 Chicken Breast Cooked and Shredded
- 1 can Black Beans
- 1 1/2 cups Cheddar Cheese Shredded
- 1/3 cup Cilantro chopped
Ingredients

- Preheat oven to 400 degrees F. Pour enchilada sauce in a dish (a pie dish works well). Add black beans, shredded chicken and shredded cheese. Top with cilantro.
- Bake 15-20 minutes of until cheese is melted and bubbly. Allow it to just start to brown. Stir the cheese into the sauce. Serve warm with tortilla chips. Enjoy!
