Banana Cupcakes with Whipcream Icing

Banana Cupcakes

This banana cupcake recipe was developed as a morning treat for our coffee group that gets together once a week! The flavor of banana in the cupcake with the cool frosting of whip cream on top is such a tasty treat! The cupcake itself comes out fluffy and moist and the whipcream is not too heavy as an icing. If you are looking for a delicious breakfast cupcake that bakes up in less than half an hour, this is the one!

Best Banana Cupcakes
These banana cupcakes bake up to a golden brown and the delightful smell of banana fills your house as these cook. This is a very simple and straightforward recipe and they are great for family breakfasts or as a treat to hand out at work. I used a large Wilton decorator tip to pipe on the icing and finished off the look with a slice of banana.
 
Here’s the recipe:
 
Banana Cupcakes with Whipcream Frosting Recipe
 
 
INGREDIENTS

1 1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted (I also use salted butter)
1 1/2 cups mashed bananas (about 4 ripe bananas), plus 1 whole banana, for garnish (optional)
2 large eggs
1/2 teaspoon pure vanilla extract
 
 
 
DIRECTIONS
 
Heat oven to 350 degrees. Place muffin liners in a cupcake pan and spray the liners with a non-stick spray like Pam Baking spray. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Mix the butter, mashed bananas, eggs and vanilla extract together in another larger bowl. Pour the dry mixture into the wet mixture a little at a time, with a mixer on low to medium speed for a few minutes until all ingredients are combined. Use a spoon or ice cream scoop to scoop the batter into the muffin liners.
Bake 350 for 25 to 30 min until knife or toothpick comes out clean.
 
Makes 12-15 cupcakes
 
 
INGREDIENTS FOR WHIPCREAM
 
1 Tablespoon Superfine Sugar (I love C&H brand that comes in the white carton)
1 Teaspoon of Vanilla Extract
1 1/2 cups cold heavy cream (or whipping cream)
 
DIRECTIONS
 
Add the sugar, vanilla, and cream to a bowl and whisk on high speed until medium peaks form, about 1 to 2 minutes. (Alternatively, you can whisk the cream by hand in a large chilled bowl for about 3 to 4 minutes.) Spread or decoratively pipe the whipped cream from a pastry bag evenly over each cupcake. Garnish with a piece of cut banana.
