Apricot Pecan Scones

Are you ready for some delicious goodness? So scones… you find them regularly at coffee shops, and I’m usually so sad and disappointed when I buy them because they are often so brick-like and stale. It wasn’t until I started experimenting with baking that I found my “happy recipe” for scones. After lots of tweaking, I found a recipe that out does the rest! Truly! These apricot pecan scones have a secret ingredient that gives them their interesting and delightful flavor- yogurt!

Apricot Pecan Scone

The trick for this dough, as it is for most pastry doughs, is to not overwork it. You want to keep the butter super cold and chunky and only blend in the flour just enough. This helps to keep a lightness to the dough. These scones are incredibly easy to make and can even be prepped the night before and then popped into the oven in the morning. They also bake up quickly and store very well, so you can make them the night before and then simply heat them covered in some foil in the toaster oven or with paper towel in the microwave.

These scones come out tasting sweet and fluffy and the flavors of apricot, orange, pecan and yogurt blend just perfectly. When they are warmed up, they literally melt in your mouth. What’s wonderful about these treats is that they store well for a few days and they make a perfect breakfast-to-go item, a quick and easy lunch snack, or even a yummy dessert after dinner. Here’s the recipe:

Apricot Pecan Scones
Makes 8 Scones
 
INGREDIENTS
 
3 cups all purpose flour plus more for flouring pans
1/3 cup sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp sea salt
1 cup (225 g) cold butter cut into chunks
2/3 cup Trader Joe’s Reduced Sugar Organic Apricot Preserves
1/2 cup chopped pecans plus 2 tbsp finely chopped pecans for tops
Grated zest of 1 orange
1 cup cold yogurt plus 2 tbsp for coating tops
 
 
 
DIRECTIONS
 
1) Preheat oven to 400 degrees
2) Flour the bottom of an 8″ cake pan
3) Line a cookie sheet with parchment paper
4) Sift the flour, sugar, baking powder, baking soda and salt in a large bowl.
5) Add the chunks of butter and chop in with a pastry cutter/blender, keeping the chunks of butter large.
6) Add the apricot preserves, pecans (leaving some for topping later) and Orange zest and stir to coat. Do not overwork the dough.

7) Add the yogurt and stir to thoroughly moisten the dry ingredients, adding a little flour to keep the dough from sticking to bowl. The dough should be fluffy and a little moist and sticky. Don’t knead too much, just enough to bring the dough together.
8) Turn the dough out into the floured cake pan and spread it out.

9) Turn the dough out onto a floured work surface and cut the dough into 8 wedges. Cut line down middle. Then turn and down the middle. And do this two more times, like slicing a pizza.

10) Transfer the wedges to the parchment paper cookie sheet. Space the wedges about 2 inches apart.
11) Lightly brush each scone with yogurt and then sprinkle pecans on top.

12) Bake at 400 until they are golden brown. 25-27 minutes, check them with a sharp knife inserted into the center. When it comes out clean, they are done.
13) Let them cool on the cookie sheet for a few minutes and then serve or store. They keep for a few days. Heat them up covered in foil in the toaster oven or in the oven. Also heat in microwave covered with paper towel.
