- 1 4-5 lb. Whole Organic Uncooked Chicken
- 1-2 Tbsp Salt
- 1 tsp Pepper
- 2-4 Tbsp Butter
- 2 Tbsp Butter
- 2 Tbsp Flour
- 1/2 cup Dry White Wine
- 2 cups Chicken Stock or Bone Broth
- 1/4 tsp Pepper Add more to taste

- Pre-heat oven to 450 degrees. Clean and truss the chicken. Place in a skillet breast-side up. Sprinkle 1 tablespoon of salt all over the chicken.
- Rub the chicken with 2-4 tablespoons of butter. Sprinkle additional salt and pepper.
- Roast the chicken for 20 minutes at 450 degrees. Scoop the butter and drizzle over the chicken. Reduce the temperature to 325 degrees and roast 60-90 minutes, until an instant read thermometer reads 160 degrees when inserted into a thigh.
- Place the cooked chicken on a cutting board and tent with foil. Allow to rest for 20-30 minutes. Save the pan drippings for gravy.
- Save 2 tablespoons of the pan juices and heat over medium heat in the cast iron skillet. Add 2 tablespoons of butter and allow to melt. Add the 2 tablespoons of flour and whisk until smooth. Allow this sauce to thicken and brown.
- Add the 1/2 cup of white wine and scrape the pan. Add the 2 cups of broth and simmer for about 5 minutes until the sauce thickens. Add pepper to taste. Enjoy over the chicken and sides.
