Can you believe it’s Halloween weekend already! It’s crept up on us quick! We’ve barely had time to get the Halloween decorations out, and I went fairly simple this year. One thing I love about Halloween is how creative everyone gets. I love seeing people come up with silly spooky costumes and how they decorate their houses. Traditionally, I make some kind of fun dessert and hand them out to friends and family. This year, I went with some witch theme cupcakes and opted for a chocolate and caramel flavor… because who doesn’t like a little caramel with their chocolate 😉
I won’t lie! I had a little help from my friends over at Wilton for these witch theme cupcakes. Sometimes I love going to Michaels and just roaming around until something catches my eye. This witch cupcake decorating kit looked like a fun project. I’m always waiting for something to pop out at me and this kit did the trick. I love these kits because they have the cupcake paper liners, the paper cutout toppers and the decoration stars all ready to go. All you have to do is bake the cupcakes! I’ve been playing around with my chocolate cupcake recipe a bit and wanted to see if I could make the recipe a little more fluffy. I’ve also never done a caramel flavored frosting and thought this would be a great chance to give it a whirl.
These chocolate cupcakes came out moist and fluffy. The chocolate flavor is complimented with a bit of coffee flavor added to the recipe. And then the frosting!!! Oh yummy yummy yumminess! I seriously think this is my new favorite cupcake frosting. I’m not sure why I’ve never tried caramel in the frosting before, but ohhh boy! The buttercream frosting is one of my favorites. It always comes out tasting amazing and the texture is always creamy and smooth. And now, with the caramel flavor, it adds a sweetness that isn’t too over the top. I had one of those happy feet moments when I sampled the cupcake with the caramel frosting.
The witch feet cupcake topper were just too cute to pass up in the store. I love bringing a smile to people’s faces on Halloween, and these witch themed cupcakes seemed to do the trick!
Here’s the recipe for the witch theme cupcakes:

- 1 1/2 cups Sugar
- 1/2 cup Brown Sugar
- 2 cups All-Purpose Flour
- 1/2 cup Trader Joes Unsweetened Chocolate Cocoa
- 1/4 cup Hershey Dark Chocolate Cocoa
- 1 1/2 tsp Baking Powder
- 1 1/2 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs
- 1/2 cup Milk
- 2 tsp Vanilla
- 1/4 cup Vegetable Oil
- 1/2 cup Hot Coffee
- 1 package Wilton Witch Cupcake Decorating Kit
- 1 cup Butter for frosting
- 4 cups Confectioners' sugar for frosting
- 4 Caramels or caramel sauce for frosting
- 1-2 Tbsp Milk or Water for frosting

- Preheat oven to 350 degrees F. Line cupcake pan with the witch theme liners. Spray with non-stick spray.
- Combine dry ingredients in a bowl. Stir slowly to combine.
- To the dry ingredients, add 2 eggs, 1/2 cup milk, 1/4 cup vegetable oil, 2 tsp of vanilla and mix well, scraping down the sides of the bowl. Add the 1/2 cup hot coffee (be careful not to splash!) Combine with a mixer or a whisk. Once combined, use an ice cream scooper to scoop batter into each cupcake liner. Fill only 3/4 full.
- Bake at 350 degrees for 15-20 minutes, checking with a toothpick or sharp knife (if it comes out clean, then the cupcakes are done). Remove from oven and allow to cool before frosting.
- To make the butter cream frosting, beat the cup of butter for two minutes until softened and lighter in color. Slowly add the 4 cups of confectioners sugar. At this point, you can either melt 4-6 caramels in a small sauce pan and add about 1 tablespoon of milk and mix until creamy and then add this to the butter cream and mix on medium until completely blended. Or you can add a few tablespoons of caramel sauce. Add more powdered sugar to reach desired consistency.
- Color the frosting purple by adding red and blue food coloring or use Wilton's purple frosting color. Load a piping bag or fill a ziplock bag with the frosting. Cut the end of the ziplock bag and pipe the frosting onto the cupcakes. Add the stars to the top and then place the witch feet into the frosting. Happy Halloween!
