We have a boatload of zucchini to use up from the garden, and I had made some homemade tomato sauce with a bunch of other veggies from the garden, so zucchini + tomato sauce = yummy Italian Style Zucchini Boats! Add a little chicken and melted cheese to the top and you have a delicious home cooked healthy meal 🙂
These zucchini boats bake in the oven super easy and they smell wonderful while they cook. If you buy the chicken pre-cooked and just add a store bought pasta sauce, then you will have a very quick meal. These zucchini boats are full of yummy goodness. They taste like little pizzas and you can even individually tailor them for each of your family members, so feel free to add Italian sausage or try meatballs. You can just do veggies and no meat for the vegetarians. And even add more veggies inside the zucchini halves. - 2 Zucchini Cut in half lengthwise
- 2 cups Ragu Sauce or Homemade Tomato Sauce
- 1 Cup Shredded Mozzarella or Colby/Jack Cheese
- 2 Cups Shredded Pre-cooked Chicken or Italian Sausage
- 2 Tbsp olive oil
- 1 Tbsp Garlic Powder
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 Tbsp Basil Fresh or Dried

- Preheat oven to 400 degrees F.
- Cut the zucchini in half lengthwise. Scoop out the center with a spoon, removing the seeds.
- Lay the zucchini, skin side down in a large baking dish. Drizzle olive oil onto each zucchini half. Sprinkle the zucchini with garlic powder, salt, pepper and basil. Add a handful pre-cooked chicken or Italian sausage to each zucchini. Spoon a half cup of chunky tomato sauce on top. Add shredded mozzarella or colby/jack cheese to the top. Sprinkle with basil again.
- Cover with foil and bake for about 25 minutes at 400 degrees. After 25 minutes, remove the foil and broil the zucchini boats for another 5 minutes until cheese melts and starts to brown a bit. Remove from oven and allow to cool for a minute and serve warm. Enjoy!
