We recently traveled to Denver to celebrate our niece’s birthday. This special little girl was turning 5 and having a Mermaid Birthday Party. Her mom found this great idea to make Oyster Pearl Cookies to tie in with the sea theme, and I thought they would be a great party idea to share here.
This is a very easy party treat to make and the guests kept remarking about how cute they were. The cookies take less than a half hour to assemble and the frosting can be dyed any color to tie into your sea theme. We happened to use pink because it’s one of our niece’s favorite colors.
These oyster pearl cookies are super simple to make and very delicious. They are made with vanilla wafers, buttercream frosting and little pearl candies. Here is the recipe:
Oyster Pearl Cookies for Mermaid Party Theme
INGREDIENTS
1-2 Boxes Vanilla Wafers
1 Batch Buttercream Frosting (see below or purchase a container of vanilla frosting)
Red Food Dye
Pearl Candies
Piping bag with star tip or a large ziplock bag
(For Vanilla Buttercream Frosting)
1 cup (8 oz.) Butter (salted or unsalted is fine)
2 1/2 cups powdered sugar
1 Tbsp Vanilla Extract
DIRECTIONS
Sort the vanilla wafers and use the ones that aren’t broken. Lay rows of vanilla wafers top side down on a serving tray.
Prepare frosting by beating butter on medium speed for 3-5 minutes, stopping to scrape the bowl. You want the butter to be completely whipped and lighter in color. On low speed, gradually add the powdered sugar. Once the sugar is incorporated, on medium-high speed, add the vanilla and a few drops of red dye. Whip at high speed 2 minutes until light and fluffy. Add frosting to a piping bag readied with a piping tip (Wilton 1M).
Or dye your store-bought vanilla frosting. Prepare a ziplock bag with a corner cut off, or a piping bag with a star tip. Load the frosting into the bag and pipe pink frosting into the middle of the cookie.
Place the a vanilla wafer cookie on top of the frosting, tilted to look like an oyster shell and then place one “pearl” candy just inside each.
Keep the cookies refrigerated until the party starts.
