There is something very nostalgic for me about the smell of blueberry muffins baking in the oven. My grandma used to make sweet treats for breakfast all the time and every time I bake something with blueberries, it takes me back to being a little girl and anxiously waiting for breakfast time at grandma’s house. This recipe started as a banana walnut muffin recipe and then I thought, “Why not blueberries?” And voila, Blueberry Banana Walnut Muffins. If you are looking for a delicious breakfast muffin that bakes up in less than half an hour, this is the one!
The great thing about these muffins is that the batter mixes together easily and they bake up within minutes. If you keep your browning bananas and a bag of frozen blueberries in the freezer, then with the standard ingredients that most of us have around all the time, you should be able to bake these up in a jiffy. Once you make them, you can store them for a few days and simply heat them in a toaster oven for breakfast! Yummmmm!!! Here’s the recipe:
Blueberry Banana Walnut Muffins Recipe
INGREDIENTS
8 Tablespoons (4 oz.) softened margarine or butter
1 cup sugar
1 egg
1 cup mashed ripened bananas (about 3 bananas)
1 tsp nutmeg
1 tsp vanilla
1 tsp baking soda dissolved in 1 tablespoon cold water
1/2 tsp salt
1 1/2 cup flour
1/2 cup chopped walnuts
1 cup rinsed blueberries
DIRECTIONS
Spray liners with non-stick spray and insert in muffin tray. With a beater, cream the softened butter with the sugar. Add one egg and beat until mixed. Add the banana, nutmeg, vanilla, baking soda in water, and salt and beat until mixed. Mix in the flour until just barely mixed, texture should become thick and sticky. Mix in the walnuts for just a few seconds. Fold in the blueberries gently until mixed. Bake at 400 degrees for 12-15 minutes until they turn golden brown. Make sure to check the muffins with a toothpick or knife inserted in center and only cook for a minute to two minutes longer if needed (these brown quickly). When you remove from the oven, you can also let the muffins cool a bit in the pan (as they will continue to cook in the pan).
Makes 12 Muffins, Don’t fight over these!
