These apple cinnamon muffins come to me from a friend who had the recipe stashed away in her favorites box. I have been addicted to Honeycrisp apples as of late because they are perfectly balanced between tart and sweet, and they are always very juicy and crisp. This makes them the perfect apple to bake with. If you are looking for a delicious breakfast muffin that bakes up in less than half an hour, this is the one!
This recipe calls for 3 apples and you can use any variety that is a favorite with your family, but I highly suggest you try Honeycrisp apples if you have not tried them yet. They are a special variety that were developed at the Minnesota Horticultural Research Center at the University of Minnesota. The Honeycrisp was almost slated to be discarded, but over the years, it has become prized for its sweetness, firmness, and tartness.
These apple cinnamon muffins bake up to a golden brown and the spices fill your house with the sweet smell of cinnamon, nutmeg and apples. They are great for family breakfasts or as a treat to hand out at work. It’s like having a piece of apple pie without all the tedious work of making the crust!
This is one of my favorite recipes because you literally dump all the ingredients in a bowl and mix with a mixer for a few minutes and then you pour the batter in the muffin cups and bake them up. Serve with a dab of butter on each side of the cut muffin and breakfast is served! These go fast, and this recipe makes about 20 muffins which seems to be perfect for having a few leftovers for a snack the next day. Hope you enjoy! Here’s the recipe:
