This chicken potato skins skillet dinner bake is hearty and delicious. Imagine potato skins with melted cheddar cheese, crushed bacon pieces, chives and spiced chicken all combined in one dish! This dinner is super easy to make and your family and kids will gobble gobble it up!

Have you been getting stuck for dinner ideas lately? And if you’re busy like we are, I’m betting you are wanting simple, easy and delicious dinners that everyone in the family enjoys. This Chicken Potato Skins Skillet Dinner Recipe is one of those all time favorites in our family. You simply chop up the ingredients, add some basic spices, dump it in a skillet or oven safe dish and bake! Voila, so easy! At the end, you spread on some shredded cheddar cheese and bake for a few minutes longer. When you take this chicken potato bake out of the oven, you will be so happy with the results! The combination of chicken and potatoes makes this a hearty meal that will leave your family coming back for seconds.

Baked Chicken and Potatoes with Cheese and Bacon

Surprisingly, the chicken comes out wonderfully tender. I usually go with dark meat, like chicken thighs, when I bake chicken in the oven or the crock-pot because it comes out juicy and flavorful. I also buy nitrate free bacon. We love the Trader Joe’s Apple Woodsmoked Bacon. I grill the bacon in a pan while I chop and prep the other ingredients. Then break the bacon into bits and spread over the chicken and potato bake. The chicken and potatoes are flavored with salt, black pepper, paprika, garlic powder, hot sauce and olive oil. You won’t believe how easy this recipe really is. There are only a few ingredients and yet it tastes soooo good!

You don’t have to use a skillet for this recipe, but there is something about baking homemade meals in a skillet that makes them feel more special. The flavors combine better in a skillet, and they are very easy to clean once you learn how to keep them properly seasoned.

And who doesn’t want their dinner to be prepared all in one dish? I know I love it when I can just dump a bunch of ingredients together and get yummy perfection! You could prep this Chicken Potato Skins Skillet Dinner dish ahead of time and easily stick it in the oven when family gets home or guests arrive. And you can make recipe for as many people as you want. If you have leftovers, simply store them in a freezer bag and then take it out to thaw an hour or two before heating. Simply heat the chicken potato skins in the oven or a small toaster oven covered with foil. It almost tastes better the next day because all of the spices and ingredients are more combined!

This Chicken Potato Skins Skillet Dinner Recipe is easy to make and bakes all in one dish. It's loaded with spiced chicken and potatoes, crushed bacon pieces, melted cheddar cheese and chives. This is a great family meal or dinner dish or appetizer for your next gathering or party. Make it ahead and pop it in the oven! The leftovers keep perfectly and reheating is a cinch. Ingredients Method Notes

Ingredients
  

  • 4 Chicken Thighs Chopped into cubes
  • 1-2 Russet Potatoes Chopped into cubes
  • 1/3 cup olive oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 tsp Paprika
  • 1 Tablespoon Hot Sauce
  • 2 cups Cheddar Cheese Shredded
  • 3-4 pieces bacon We use Trader Joe's nitrate free Applewood smoked bacon
  • 1/2 cup Chives Chopped

Method
 

  1. Preheat oven to 400 degrees F.
  2. Oil a cast iron skillet or spray a 9 x 13" baking dish with cooking spray.
  3. In a large bowl, mix together the olive oil, salt, pepper, garlic powder, paprika and hot sauce. Add the cubed chicken and potatoes and combine.

  4. Scoop the potatoes and chicken into the prepared skillet or dish.

  5. Bake the potatoes and chicken in the skillet for about 50-60 minutes, stirring about every 20 minutes. The potatoes and chicken should cook all the way through and start to turn a light golden brown. The edges should also crisp just a bit. While the potatoes and chicken bake, fry the bacon in a pan until thoroughly cooked. Dry on paper towels. Break the bacon into pieces.
  6. Once the potatoes and chicken are cooked, remove from the oven and top with bacon pieces, shredded cheese and chives. Return to the oven for 5 more minutes or until the cheese is melted.
  7. Serve the chicken potato skins dish warm with either sour cream or ranch dressing. Enjoy!!!
