There are a few tricks to making this chicken dinner recipe come out perfect in the slow cooker. These tips tend to be universal for Crock pot recipes, and with experimenting, I’ve found them to help add flavor and keep meats tender.
- Brown the chicken or meat in a frying pan first for a few minutes before adding to the slow cooker. This will seal in the juices and also create a browned crust that provides loads of flavor to your meal.
- Saute onions, peppers and any other flavorful veggies in a frying pan before adding the the slow cooker to add flavor. This is a great trick for soups, stews and gumbo recipes!
- You don’t need to add any liquids. The chicken produces its own juices as it cooks.
- Set the slow cooker on high the first hour and then turn to low for the rest of the time. This way, the cooker heats up and gets everything cooking and then all of the ingredients can combine slowly.
- Add cheese last. Wait until the chicken and potatoes are completely cooked and then before serving up this dish, add cheese on top. The heat will melt the cheese for you.

- 2 tbsp olive oil
- 4 cloves garlic Minced
- 1 clove Shallot Sliced
- 4-6 Chicken Thighs
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 6 Red Potatoes Chopped
- 1 tbsp Thyme
- 1 tbsp Rosemary dried Or Fresh sprigs

- Chop Red Potatoes into 1 inch chunks. Add Potatoes to the Crock Pot. Season with salt, pepper, thyme and rosemary. Turn heat on high.
- Heat 2 tablespoons of olive oil in a pan. Add sliced shallots or a small amount of onion. Heat until softened. Add minced garlic and heat for about 1-2 minutes. Turn heat off before garlic turns brown.
- Add the shallots and garlic to the potatoes. Heat the chicken thighs in the frying pan and add about 1/2 cup of water. If there is skin on the chicken, allow the chicken to brown on both sides. The chicken does not need to be cooked all the way through. Add the chicken to the Crock pot. Do not add any liquids to the Crock pot.
- You have the option of cooking the chicken and potatoes on high for about 3-4 hours, or you can start it on high for one hour and then turn to low for 4-5 hours. When you are ready to serve, shred Parmesan cheese oven the chicken and potatoes. Serve warm and enjoy!
