  1. Soak the Cashews for a least 8 hours or overnight in a bowl with 3-4 cups water. Drain and rinse once soaked.
  2. Place cashews in a food processor along with lemon juice, water, salt and nutritional yeast. You can add any of the other ingredients from the flavors above to make a flavored cashew cheese as well. Blend in a Food Processor on High for a few minutes. Stop to scrape down the cheese and continue blending until all the ingredients become creamy. It will seem grainy at first but keep blending and scraping down sides until it reaches a creamy consistency.
  3. The Cashew Cheese has the consistency of Cream Cheese when processed and it will firm up once stored in the fridge. It can be stored for up to a week, Enjoy!
