Mint Chocolate Chip Cookies
These mint chocolate chip cookies are a St. Patrick’s Day spin on a traditional cookie. They are chunky and soft and made with peppermint and chunks of chocolate.   1. Heat oven to 375 degrees. Line a baking sheet with parchment paper. Cream the butter and sugar until the butter turns a lighter color, about 3-5 minutes.
  2. Mix the egg into the butter and sugar and blend.
  3. Add the vanilla and mint extracts.
  4. In a separate bowl, combine the flour, baking powder and salt. Once combined, add into the butter/sugar mix with a wooden spoon, scraping the sides and pulling the mixture into the middle. Add green food coloring as you combine. Add small handfuls of flour until the dough pulls away from the bowl and becomes like a thick chocolate chip cookie dough.
  5. Form small balls with the dough and add to baking sheet lined with parchment paper. Press to flatten.
  6. Bake at 375 degrees for 12-15 minutes. Cookies will turn slightly golden on bottom. Allow to cool on a wire rack. Enjoy warm with milk!
