Heat Olive Oil in a pan and grill chopped carrots, onion and celery until tender.
Pour 2 containers of low sodium chicken stock into crockpot and set to high heat. Shred cooked chicken and add to crockpot. Add grilled chopped vegetables. Season with the garlic powder and pepper.
After one hour on high, turn the heat to low and allow to cook another 3 hours. Serve with Saltine Crackers and Enjoy!
