This Chicken Potato Skins Skillet Dinner Recipe is easy to make and bakes all in one dish. It’s loaded with spiced chicken and potatoes, crushed bacon pieces, melted cheddar cheese and chives.   1. Preheat oven to 400 degrees F.
  2. Oil a cast iron skillet or spray a 9 x 13″ baking dish with cooking spray.
  3. In a large bowl, mix together the olive oil, salt, pepper, garlic powder, paprika and hot sauce. Add the cubed chicken and potatoes and combine.
  4. Scoop the potatoes and chicken into the prepared skillet or dish.
  5. Bake the potatoes and chicken in the skillet for about 50-60 minutes, stirring about every 20 minutes. The potatoes and chicken should cook all the way through and start to turn a light golden brown. The edges should also crisp just a bit. While the potatoes and chicken bake, fry the bacon in a pan until thoroughly cooked. Dry on paper towels. Break the bacon into pieces.
  6. Once the potatoes and chicken are cooked, remove from the oven and top with bacon pieces, shredded cheese and chives. Return to the oven for 5 more minutes or until the cheese is melted.
  7. Serve the chicken potato skins dish warm with either sour cream or ranch dressing. Enjoy!!!
